All five of the Passport series 2016 arrived in store.

We were able to secure just a few complete sets for you to benefit from the 40% discount on the Three Country Cab.

Each of these unique pieces can be bought separately, but availability of complete sets is limited: First come first serve.

All blends in this series distinguish themselves with a overly ‘yummy’ aroma and have great potential to mature. The red Cab Franc / Cab Sauvignon is very tasty, a little of herbs and spice and with rich berry flavors. The red Montepulciano, with its soft aromas of warm oak and earthy tones, will steal everyone’s heart. The white Sauvignon Blanc / Muscat is a treat for your senses. The Pinot Noir /Merlot / Shyraz displays a deep ruby color framed in soft, dry tannins, gentle notes of spice, smoky oak, vibrant flavors of plum, cherry and red berries. The Three Country Cab, a stunning blend of Cab Sauvignon from three different countries. Whats up? Christmas Wine, Oak Barrel aging and Elderberry Wine

First customer came in to make his Christmas 2017 wine, .. serious! Demand for Oak Barrel aging growing steadily. Have ordered new barrels to double our capacity. My Concord and Elderberry wines of last season’s harvest are getting really good. Very flavorful. Absolutely worth considering this yourself.

Oak Barrel Treatment

Big red wines benefit greatly of a treatment in an oak barrel. Oak barrels are traditionally used for making quality wines. Many commercial red wines will have been aged in oak barrels. For some, local legislation requires part of their life to be spent in an oak barrel. Oak gives wine soft tannins and vanilla tones as they mature. Further the slow oxidization (micro oxygenation) delivers a wonderful bouquet. The wine becomes more enhanced and concentrated than a same wine that has not lodged in a barrel. Great wines deserve oak.

Pails vs Kits

Customers frequently ask me about the difference between using a pail of juice or using a kit to start their wine. Of course you can guess my answer and yes, I have tried both. But, let me tell you what articles say about this:

“Quite often it is buyer beware on these pails. Check to make sure they are in fact grape juice and if you are getting what you think you are. Look at the pail and if you see the words wine “must” or “may contain grape juice and or concentrate and or liquid invert sugar” you do not have full juice. Don’t be mislead. ..”

Products should have a label. It might be interesting to read this and see what its content is all about and at least what country it comes from. Reasonably spoken, full juice pails are available for only a short period after harvest in October, come from a reasonable shipping range and will be refrigerated. You will find the real juice pails to be stiffly priced, but that is the sign you are probably talking about the real juice.

Our kits are the alternative to full juice, without compromising on quality and based on pure grape juice, available year round and from countries all over the world. Processing techniques have drastically improved over the past decades and the process of dehydrating the juice to make it more economical to transport over long distances is done at virtually no loss in flavor and taste. Our top line red wine kits further contain a big extra pack of grape skins and pulp mix that is being added to the juice prior to the fermentation process. This gives these wines extra body, structure, intensity, flavor and tannins. Exactly what you should expect from a serious bold wine.
